How many strawberries?!?!

We have a GREAT benefit of Ron's sister having a greenhouse...just 20-30 minutes away.  She also gives us farm raised eggs.  Last week she gave us 5 more quarts of strawberries.  I was going to make more jam...Ron said no.  (OK!)  So...we ate one quart here and there....but then the question was....what do you do with 4 qts of berries??  Cake, muffins, shortcake, milkshakes, pie, cupcakes...??  Here's what I did with 4 qts of berries...

 Shortcake (see below for recipe)
 Finished Muffins
 Remaining berries cut and shortcake (not too sure about this...)
Cake with leftover "glaze" and chopped berries on top.

Only thing I have tried so far is the muffins...and I don't know if it was because I used Splenda (usually doesn't matter) or what but they are a little "heavy"/"gluey" but taste good and well, just drink Milk with them! :)

Strawberry Shortcake:
6 cups sliced strawberries + 1/4 c sugar
1/4 c sugar
2c flour
2 tsp baking powder
1/2 c butter
1 egg
2/3 c milk
1 c whipping cream, whipped


Stir together sugar, flour, and baking powder.  Cut in butter until mixture resembles corse crumbs.  Combine egg and milk; add to flour mixture.  Stir just to moisten.  SPread the dough in a greased 8x1/2" round baking pan.

Bake in a 450 degree oven for 15-18 minutes or until a wooden toothpick inserted near the center comes out clean.  Cool in pan for 10 minutes.  Remove from pan.  Split into 2 layers.  Spoon half of the whipped cream and strawberries over bottom layer.  Replace the top layer.  Top with remaining berries and cream.  Cut into wedges to serve.


(Obviously I changed this....a lot.  I just wanted the shortcake recipe...and it wasn't what I was imagining...hoping it still tastes good.  I think my baking powder is too old.....oh well!)
